Maitake mushroom is also known as hen-of-the-woods and sheep's head mushroom. Italian communities refer to it as the signorina mushroom. One of the constituents of Maitake is an alpha glucosidase inhibitor which has been shown to have a hypoglycemic (blood sugar lowering) effect.
Maitake is believed to have the ability to activate effector cells such as t-cells, macrophages and natural killer cells, and T cells, and also interleukin-1 and superoxide anions. Maitake mushroom also contains antioxidants. The Memorial Sloan-Kettering Cancer Center showed Maitake to stimulate immune response in breast cancer.
